Condition dried fruit before it goes to the pantry
Pieces rarely dry at exactly the same rate. Conditioning lets remaining moisture spread more evenly and makes problem pieces easier to find.

Cool, then loosely pack
Let dried fruit cool completely. Place it loosely in a clean, dry container, close it, and check it daily for about a week. Shake the container so pieces do not stay pressed together.
Watch for condensation
If moisture appears inside the container, return the fruit to the dehydrator. Mold means the batch should be discarded. When conditioning is complete, package the fruit in clean moisture-resistant containers and keep it cool, dry, and dark.
Drying times are estimates. Slice thickness, humidity, airflow, and food variety can change the finish.
