Dehydrator vs. freeze dryer: different jobs
Both remove moisture, but the machines, results, storage assumptions, and budgets are very different.

A dehydrator uses warm moving air
It is well suited to fruit, vegetables, herbs, fruit leather, and properly prepared jerky. It changes texture and concentrates flavor. The machines are generally smaller, simpler, and less expensive than home freeze dryers.
A freeze dryer works under vacuum
Freeze-drying freezes food and removes ice through sublimation. It can preserve a more porous texture and allows many foods to rehydrate quickly, but the equipment costs more and uses a different process.
Choose by the food you will actually make
If the goal is herbs, dried fruit, vegetable powders, jerky, or trail snacks, a dehydrator may cover the work. A freeze dryer makes sense only when its different results, batch size, maintenance, and cost match the household’s plan.
